The grapes were whole-bunch pressed with only short skin contact. The juice was then fermented at cooler temperatures in both stainless steel tanks to preserve the freshness and varietal character of Sauvignon Blanc, and French oak barriques to provide complexity and mid-palate weight. The wines were prevented from going through the secondary Malolactic Fermentation to preserve the purity of the acid. The wine was left unfined and sterile filtered before bottling.
Tasting Notes: Vibrant aromas of grapefruit, lime, mango give way to complex flavors on the palate. ripe passionfruit, sweet grapefruit, and mouth-watering acidity ion a smooth and succulent palate.
